Wedding Book Quilt Suggestions?

Instead of the traditional wedding guest book, I want to make a quilt. My question is, would it work better to cut the squares, have people sign them, then sew it together or sew up the quilt and have people sign it? I have worries about doing it both ways. Has anyone ever done this and which way do you recommend?
